Red Velvet Cake

Ingredients

  • 1/2 c. Shortening
  • 1 1/2 c. Granulated Sugar
  • 1 tsp. M-K Pure Vanilla Extract
  • 2 Eggs
  • 2 T. Cocoa
  • 2 oz. Red Food Coloring
  • 2 1/2 c. Cake Flour, unsifted
  • 1 tsp. Salt
  • 1 c. Buttermilk
  • 1 tsp. Baking Soda
  • 1 T. Vinegar

Cake Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, cream together shortening, sugar, and M-K Pure Vanilla Extract until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a small bowl, mix together cocoa and red food coloring to form a smooth paste. Incorporate it into the sugar mixture, beating well to ensure an even color.
  5. In another bowl, sift together cake flour and salt. Gradually add this dry mixture to the wet mixture, alternating with the buttermilk, ensuring each addition is well combined.
  6. In a small bowl, combine baking soda and vinegar. This mixture will fizz! Quickly fold into the cake batter until fully combined.
  7. Pour the batter into a greased 9×13 cake pan.
  8. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan on a wire rack before frosting.

Frosting Directions

  • 5 T. All-purpose Flour, unsifted
  • 1 c. Milk
  • 1 c. Confectioners Sugar
  • 1 c. Butter or Margarine softened
  • 1 tsp. M-K Pure Vanilla Extract
