Red Velvet cake

Ingredients
- 1/2 c. Shortening
- 1 1/2 c. Granulated Sugar
- 1 tsp. M-K Pure Vanilla Extract
- 2 Eggs
- 2 T. Cocoa
- 2 oz. Red Food Coloring
- 2 1/2 c. Cake Flour, unsifted
- 1 tsp. Salt
- 1 c. Buttermilk
- 1 tsp. Baking Soda
- 1 T. Vinegar
Cake Directions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, cream together shortening, sugar, and M-K Pure Vanilla Extract until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In a small bowl, mix together cocoa and red food coloring to form a smooth paste. Incorporate it into the sugar mixture, beating well to ensure an even color.
- In another bowl, sift together cake flour and salt. Gradually add this dry mixture to the wet mixture, alternating with the buttermilk, ensuring each addition is well combined.
- In a small bowl, combine baking soda and vinegar. This mixture will fizz! Quickly fold into the cake batter until fully combined.
- Pour the batter into a greased 9×13 cake pan.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan on a wire rack before frosting.

- 5 T. All-purpose Flour, unsifted
- 1 c. Milk
- 1 c. Confectioners Sugar
- 1 c. Butter or Margarine softened
- 1 tsp. M-K Pure Vanilla Extract
