  1. Peel the dry baking potatoes.
  2. Slice the potatoes crosswise into tissue-thin, uniform slices.
  3. Soak the sliced potatoes in several changes of very cold water for 2 hours, adding ice cubes to the last change of water.
  4. Turn potato slices onto a towel and dry each one very thoroughly.
  5. Deep fry the potato slices, a few at a time, until they turn a golden brown color, maintaining the oil temperature at 375°F. You may need to turn them if necessary.
  6. Drain the fried chips on paper towels.
  7. Season them with your choice of M-K Bar-B-Que Seasoning for a smoky and savory flavor or M-K Seasoned Salt for a classic, well-balanced taste.
