Potato Pancakes

Ingredients
- 2 Eggs, beaten
- 1/3 c. Onion, grated
- 3 T. Flour
- 1 1/2 tsp. Salt
- 1/2 tsp. M-K Ground Rosemary
- 1/4 tsp. M-K Granulated Black Pepper
- 1/2 tsp. M-K Parsley Flakes
- 1/4 tsp. M-K Rubbed Sage
- 3 c. Potatoes, grated
- Vegetable Oil (for frying)
- 2 c. Applesauce
- 1 tsp. M-K Ground Cinnamon
Directions
- In a mixing bowl, combine the eggs, grated onion, flour, salt, M-K Ground Rosemary, M-K Granulated Black Pepper, M-K Parsley Flakes, and M-K Rubbed Sage.
- As you grate the potatoes, immediately mix them into the egg mixture to prevent browning.
- Heat the vegetable oil (about 1/4 inch deep) in a frying pan.
- Drop 3 tablespoons of the potato batter into the hot oil for each pancake. Fry until browned, flipping the pancake only once.
- Once cooked, drain the pancakes on absorbent paper.
- In a separate saucepan, combine the applesauce with M-K Ground Cinnamon and heat until warm.
- Serve the pancakes hot, accompanied by the spiced applesauce.
