Mashed Potato Puffs

Ingredients

  • 2 c. Cold Mashed Potatoes
  • 2 tbsp Margarine or Butter
  • 1/4 tsp Salt
  • 1/4 tsp M-K Granulated Black Pepper
  • 2 Eggs, beaten
  • 6 tbsp Light Cream
  • Bread Crumbs
  • Butter or Margarine

Directions

  1. In a mixing bowl, combine cold mashed potatoes, melted margarine, salt, and M-K Granulated Black Pepper. Mix until well blended and fluffy.
  2. Add the beaten eggs to the potato mixture and combine.
  3. Stir in the light cream and beat until the mixture is smooth.
  4. Shape the potato mixture into portions of your desired size and roll each portion in bread crumbs.
  5. Place the puffs in a greased pan.
  6. Drizzle a bit of butter or margarine over each puff.
  7. Bake at 425°F, turning once, until they are nicely browned.
