Mashed Potato Puffs

Ingredients
- 2 c. Cold Mashed Potatoes
- 2 tbsp Margarine or Butter
- 1/4 tsp Salt
- 1/4 tsp M-K Granulated Black Pepper
- 2 Eggs, beaten
- 6 tbsp Light Cream
- Bread Crumbs
- Butter or Margarine
Directions
- In a mixing bowl, combine cold mashed potatoes, melted margarine, salt, and M-K Granulated Black Pepper. Mix until well blended and fluffy.
- Add the beaten eggs to the potato mixture and combine.
- Stir in the light cream and beat until the mixture is smooth.
- Shape the potato mixture into portions of your desired size and roll each portion in bread crumbs.
- Place the puffs in a greased pan.
- Drizzle a bit of butter or margarine over each puff.
- Bake at 425°F, turning once, until they are nicely browned.
