Diabetic Cookies

Ingredients

  • 1 1/4 c. Water + 2 T. Water
  • 1/3 c. Oil or Margarine
  • 2 c. Seedless Raisins
  • 2 tsp. M-K Ground Cinnamon
  • 1/2 tsp. M-K Ground Nutmeg
  • 1/2 tsp. Salt
  • 1 tsp. Soda
  • 2 tsp. Liquid Sweetener
  • 2 Eggs, beaten
  • 2 c. Flour
  • 1 tsp. Baking Powder
  • 1/3 c. Nuts, chopped (optional)

Directions

  1. In a saucepan, combine 1 1/4 c. water, oil or margarine, raisins, M-K Ground Cinnamon, and M-K Ground Nutmeg. Bring the mixture to a boil and let it cook for 3 minutes.
  2. Remove from heat and allow it to cool.
  3. In a separate bowl, dissolve salt and soda in a combination of liquid sweetener and the additional 2 T. of water.
  4. Whisk in the beaten eggs into the sweetener mixture.
  5. Once the raisin mixture has cooled, combine it with the egg mixture.
  6. In another bowl, sift together the flour and baking powder. Gradually add this to the combined wet ingredients, ensuring a smooth blend.
  7. If using, fold in the chopped nuts.
  8. Preheat the oven to 375°.
  9. Using a teaspoon, drop cookie dough onto a greased cookie sheet, ensuring they are spaced out to avoid merging during baking.
  10. Bake the cookies until they turn lightly browned.
  11. Once done, remove from the oven and let them cool on a wire rack.
