Diabetic Cookies
Diabetic Cookies are a considerate treat designed to suit those monitoring their sugar intake, without compromising on flavor or texture. These cookies boast a rich, spiced aroma from the M-K Ground Cinnamon and M-K Ground Nutmeg, with seedless raisins providing natural sweetness. The use of liquid sweetener ensures they remain sugar-free, making them a safer option for diabetics. Optional nuts add an additional layer of texture and depth. Ingredients
- 1 1/4 c. Water + 2 T. Water
- 1/3 c. Oil or Margarine
- 2 c. Seedless Raisins
- 2 tsp. M-K Ground Cinnamon
- 1/2 tsp. M-K Ground Nutmeg
- 1/2 tsp. Salt
- 1 tsp. Soda
- 2 tsp. Liquid Sweetener
- 2 Eggs, beaten
- 2 c. Flour
- 1 tsp. Baking Powder
- 1/3 c. Nuts, chopped (optional)
Directions
- In a saucepan, combine 1 1/4 c. water, oil or margarine, raisins, M-K Ground Cinnamon, and M-K Ground Nutmeg. Bring the mixture to a boil and let it cook for 3 minutes.
- Remove from heat and allow it to cool.
- In a separate bowl, dissolve salt and soda in a combination of liquid sweetener and the additional 2 T. of water.
- Whisk in the beaten eggs into the sweetener mixture.
- Once the raisin mixture has cooled, combine it with the egg mixture.
- In another bowl, sift together the flour and baking powder. Gradually add this to the combined wet ingredients, ensuring a smooth blend.
- If using, fold in the chopped nuts.
- Preheat the oven to 375°.
- Using a teaspoon, drop cookie dough onto a greased cookie sheet, ensuring they are spaced out to avoid merging during baking.
- Bake the cookies until they turn lightly browned.
- Once done, remove from the oven and let them cool on a wire rack.
