Cream Cheese Mints

Ingredients
- 1 (3-oz.) package Cream Cheese, softened
- 1/2 tsp. M-K Peppermint True Extract
- 2 to 2 1/2 c. Powdered Sugar
- Sugar for rolling
- Optional: Food coloring of your choice
Directions
- In a mixing bowl, blend together the softened cream cheese and M-K Peppermint True Extract until well combined.
- Gradually add the powdered sugar to the cream cheese mixture, incorporating it slowly. Continue to add the powdered sugar and knead the mixture until it reaches a consistency that’s pliable and no longer sticky.
- If you’re using food coloring, divide the dough into four equal portions. Knead your chosen colors into each portion until the color is uniformly distributed.
- Roll the colored dough into small balls, roughly 3/4 inch in diameter.
- Roll each ball in sugar to coat them evenly.
- Using a fork, gently press down on each sugar-coated ball to flatten them slightly, creating a textured pattern.
- Let the mints dry at room temperature. This will help them firm up and take on a slightly crusty exterior while remaining soft inside.
- Once dried, store the mints in a loosely covered container and keep them in the refrigerator.
