M-K Carrot Cake

Ingredients
- 1 c. Cooking Oil
- 2 c. Sugar
- 4 Eggs
- 2 c. Flour
- 1 tsp. Salt
- 2 tsp. Baking Soda
- 1 tsp. M-K Pure Vanilla Extract
- 2 tsp. M-K Ground Cinnamon
- 3 c. Carrots, grated
- 1 c. Pecans, chopped
Directions
- Beat together sugar and oil.
- Add eggs and beat until well mixed.
- Sift flour, salt, soda, and M-K Ground Cinnamon. Blend in with the sugar mixture.
- Slowly mix in the carrots and pecans. Pour into 2 greased and floured 9-inch cake pans.
- Bake in a 350° oven for 25 to 35 minutes or until done. Once cooled, frost with Cream Cheese Frosting.
