Applesauce Cake

Ingredients
- 2 1/2 c. Flour
- 2 c. Sugar
- 1/4 tsp. Baking Powder
- 1 1/2 tsp. Salt
- 3/4 tsp. M-K Ground Cinnamon
- 1/2 tsp. M-K Ground Cloves
- 1/2 tsp. M-K Ground Allspice
- 1/2 c. Shortening
- 1/2 c. Water (boiling hot)
- 1 1/2 c. Unsweetened Applesauce
- 2 Eggs, beaten
- 1/2 c. Nuts, chopped
- 1 c. Flavored Raisins
Directions
- Start by creaming the shortening in a mixing bowl.
- Gradually add sugar to the shortening and continue creaming until the mixture becomes fluffy.
- Blend in the beaten eggs, and then stir in the applesauce.
- In a separate bowl, sift together the flour, salt, baking powder, and M-K Spices.
- Dissolve baking soda in boiling water.
- Gradually add the sifted ingredients to the creamed mixture, alternating with the soda water.
- Finally, fold in the flavored raisins and chopped nuts.
- Pour the batter into a prepared baking pan and bake at 350° for approximately 50 minutes or until a toothpick inserted into the center comes out clean.
