Ingredients
- 1 pkg. Orange Gelatin
- 1/2 c. Hot Water
- 1 c. Pineapple, grated
- 1/2 c. Sugar
- 2 Egg Whites
- 1 pinch Salt
- 1 c. Evaporated Milk
- 1 tsp. M-K Lemon Extract
- 12 Vanilla Wafers
Directions
- Preparation of the Gelatin Mix: Start by dissolving the orange gelatin in hot water. Once dissolved, allow the gelatin to cool.
- Mix in the grated pineapple and sugar to the cooled gelatin mixture. Set aside and let it partially congeal.
- Egg Whites: In a separate bowl, beat the egg whites until they form stiff peaks, adding a pinch of salt for flavor.
- Whipped Evaporated Milk: Ensure your evaporated milk is ice-cold. To this, add the M-K Lemon Extract. Beat the mixture until it turns stiff and frothy.
- Combining Ingredients: Carefully fold the whipped evaporated milk and the stiff egg whites into the gelatin-pineapple mix, ensuring a uniform blend.
- Assembling the Pie: Line a 10-inch pie dish with vanilla wafers, ensuring they cover the bottom of the dish. Gently pour the combined pie mixture over the wafers.
- Let the pie set by placing it in the refrigerator overnight.
