M-K Enchiladas

Enchiladas

Ingredients

  • 2 cans Cream of Chicken Soup
  • 1-1/2 c. Water
  • 1 c. Sour Cream
  • 1 pkt. JR. Mad’s Taco Seasoning OR 5 T. M-K Mexican Seasoning
  • 3 lb bag Chicken Breast, cooked and shredded or cubed
  • 8 oz. Shredded Cheese
  • 1 c. Onion, chopped
  • 10 to 12 Flour Tortillas

Directions

  1. In a large saucepan, heat the Cream of Chicken Soup and water until boiling.
  2. Stir in the sour cream and either JR. Mad’s Taco Seasoning or M-K Mexican Seasoning.
  3. Set aside 1/4 of the prepared sauce.
  4. In a separate bowl, combine the chicken, cheese, and chopped onion with the remaining sauce.
  5. Distribute the chicken mixture among the flour tortillas, roll them up, and place them on a baking sheet.
  6. Pour the set-aside sauce over the rolled tortillas.
  7. Bake in a preheated oven at 350°F for 35 to 40 minutes.
  8. Once cooked, serve with optional toppings like lettuce, additional cheese, and sour cream.
