Corn Relish
Corn Relish is a vibrant and tangy accompaniment that perfectly complements a variety of dishes. Ingredients
- 1 (10-oz.) pkg. Frozen Whole Kernel Corn
- 1/2 c. Sugar
- 1 T. Corn Starch
- 1/3 c. Cold Water
- 1/2 c. Vinegar
- 2 T. Celery, finely chopped
- 2 T. Green Pepper, finely chopped
- 2 T. Pimiento, chopped
- 1 T. Onion, finely chopped
- 1 tsp. M-K Ground Turmeric
- 1/2 tsp. M-K Ground Mustard Seed
Directions
- Cook the frozen corn according to the package directions and then drain.
- In a saucepan, mix sugar and corn starch together.
- Gradually stir in the vinegar and cold water until smooth.
- Add the cooked corn, finely chopped celery, green pepper, pimiento, onion, M-K Ground Turmeric, and M-K Ground Mustard Seed to the saucepan.
- Place the saucepan on medium heat and cook the mixture, stirring constantly, until it thickens and starts to bubble.
- Continue cooking and stirring for an additional 3 to 4 minutes.
- Remove from heat, cover, and let it chill thoroughly before serving.
