Corn Relish

Corn Relish

Ingredients

  • 1 (10-oz.) pkg. Frozen Whole Kernel Corn
  • 1/2 c. Sugar
  • 1 T. Corn Starch
  • 1/3 c. Cold Water
  • 1/2 c. Vinegar
  • 2 T. Celery, finely chopped
  • 2 T. Green Pepper, finely chopped
  • 2 T. Pimiento, chopped
  • 1 T. Onion, finely chopped
  • 1 tsp. M-K Ground Turmeric
  • 1/2 tsp. M-K Ground Mustard Seed

Directions

  1. Cook the frozen corn according to the package directions and then drain.
  2. In a saucepan, mix sugar and corn starch together.
  3. Gradually stir in the vinegar and cold water until smooth.
  4. Add the cooked corn, finely chopped celery, green pepper, pimiento, onion, M-K Ground Turmeric, and M-K Ground Mustard Seed to the saucepan.
  5. Place the saucepan on medium heat and cook the mixture, stirring constantly, until it thickens and starts to bubble.
  6. Continue cooking and stirring for an additional 3 to 4 minutes.
  7. Remove from heat, cover, and let it chill thoroughly before serving.
